Introduction: What are sprouted foods are and why do they matter? Sprouted food has been considered the basic source of life and a major source of nutrition for thousands of years. It is also called Amrit Aahar. It is considered a major source of nutrients, having amazing properties and high food and nutritional standards.

Today, people's lifestyle has become completely modern, and most of the food has become devoid of nutrition and unnatural. Most people are becoming dependent on fast food, junk food and street food. Which has brought us to the doorstep of serious health problems and obesity. Medical science believes that the root cause of most diseases is wrong eating habits, lifestyle and thinking. In such a situation, sprouted food can be the right alternative to wrong eating habits.

In diet therapy, sprouted food is considered to be a living food. Since most of the food found in nature is alkaline, sprouted food improves health, purifies the body, and makes it full of disease resistance. For health protection, our diet must contain 20 percent acidic food and 80 percent alkaline food. Sprouted food has such a good effect on the health of our body that nowadays doctors consider sprouted food as medicine and recommend its use.

Sprouted food is the sprouted seeds of cereals or pulses which in the process of germination acquire the properties to preserve and enhance life. Therefore, it is believed that it has the properties to provide new life to a person and improve health.

Consuming sprouted food as a daily diet can balance the proportion of food requirements and can be important in maintaining health.

Everyone can use sprouted food, but initially it should be taken in small quantities and chewed well. Cucumber, tomato, green chilli, black salt, coriander leaves, and lemon can be added to it to enhance the taste. Sprouted food not only has high nutritional value but also costs less. If a sick person consumes it, he gets free from the disease, and if a healthy person consumes it, he protects himself from many diseases, along with health promotion. In this way, the principle of Ayurveda, Swasthya, Swasthya Rakshanam Aturasya Vikaar Prasham, is followed literally.

Especially sunflower, moth, green gram, gram, fenugreek, cowpea, alpha, soybean, wheat, etc., can be sprouted and consumed as per the requirement or as per the doctor's advice. Special care is required while sprouting wheat so that it does not get fungus. Therefore, a glass jar should be used to sprout wheat, and it should definitely be exposed to sunlight in the morning.

Method of preparing sprouted food: Sprouting of moong, gram, dana, fenugreek, and other such seeds can be done very easily with the help of a glass jar or a wet cloth. First of all, the germinating seeds should be washed with water, and the rotten and broken seeds should be removed. After that, they should be put in a jar. It should be filled with four times more water. After soaking it in water overnight, it should be washed with clean water the next morning and tied with a clean cotton cloth. It can also be hung in a suitable place. In summer, cold water should be sprinkled on it many times, so that moisture is maintained. The next day, small sprouts come out in it. Generally, sprouts come out quickly in summer and a little later in winter. In the glass jar, also, cold water should be sprinkled from time to time as needed.

Sprouted food should not be used after being it for a long time. It should be used immediately after germination. Foul-smelling, stale sprouts should not be used. It should be cleaned thoroughly in water before eating.

The seeds selected for use as sprouted food should be fresh, new, clean, healthy, disease-free, and without chemical treatment. Old and diseased seeds do not germinate well and are also not healthy. Therefore, before use, pebbles, stones, soil, etc., should be removed, and then it should be used for germination.

After preparing the sprouts, they should be thoroughly washed and cleaned before use. During the process of germination, some seeds do not germinate and should be selected and removed. Sprouted food should be used raw because eating cooked food reduces its nutrients and nutritional value, so cooking, frying, or baking it is not appropriate from a quality point of view.

Benefits- Sprouted food is natural, fresh, and completely alive food. It is very easily digestible, tasty, nutritious, and reduces obesity. 

After germination, the quantity and availability of vitamin C, iron, vitamin B, phosphorus, and niacin increase. Thus, it is an excellent source of vitamins and minerals. The starch found in it is converted into glucose, fructose, and maltose. This not only enhances the taste but also increases its digestibility. It is quickly assimilated by the body and provides instant energy. It is easy to prepare, cheap, and budget-friendly. It is an unadulterated energy-giving food that provides complete rejuvenation.

In today's time, especially women are very worried about their shapely figure, and due to today's modern lifestyle, it is not possible to maintain it. But by taking such sprouted food, their body remains fit and fine. If these are used in breakfast every morning, by including some fresh raw fruits in it, it can also be given the form of a healthy diet. It is also suitable for people addicted to drugs and alcohol. Just as petrol is needed to drive a car, similarly, breakfast is very important to give energy to the body in the morning after sleeping overnight. Most women skip breakfast in the name of dieting, whereas this is completely unhealthy; it only harms the body. It has a complete impact on the fitness and language of the body. 

Conclusion: Sprouted food, fresh raw fruits, almonds, etc., are beneficial in breakfast, as has also been mentioned in Sushruta Samhita-
